Healthy No-Bake Oatmeal Raspberry Cookie Recipe

Materials:
Ingredients:
½ cup fresh raspberries
2 ½ cups old fashioned oats
¼ teaspoon salt
1 teaspoon vanilla extract
2 Tablespoons unsalted butter, softened at room temperature
1/3 cup honey (or for less sugar, 1/3 cup sugar-free syrup)
½ cup almond butter (or any nut butter)
Instructions:
Thoroughly wash the raspberries in a colander and pat them dry.
Mash the raspberries with the back of a spoon until the raspberries are a puree consistency.
Combine all ingredients in a medium bowl.
Mix well with a spoon or your hands.
Place parchment paper on a flat tray.
Use your hands to form 2 ½ inch round cookies. Place the cookies on the parchment paper.
Refrigerate the cookies for 2 hours.
